nöla is a dream come true; a gastronomic hotspot in one of the main buildings of the medieval city of Siguënza, the Casa del Doncel.

A place where quality and touches of haute cuisine join hands in our restaurant menu. We use locally-sourced produce and reinvent traditional dishes.

At the head of this project are Jorge Maestro and María Viqueira. Backed by years of experience in some of the top Catalan and Basque gastronomic restaurants, we’ve decided to go it alone and open our own restaurant.
